Combine the water, elderberries, ginger, cinnamon, and cloves in a medium saucepan.
Bring to a boil, uncover, and reduce heat to simmer for approximately 40 to 45 minutes or until the liquid is reduced by half.
Remove from the heat and let it cool.
Once it is lukewarm, mash the berries with a spoon or whatever works best for you.
Strain the mixture through a cheesecloth into a bowl or jar.
Allow to cool completely.
Add the honey and mix well.
Once everything is mixed up, pour it into your favorite mason jar or bottle.
Keep stored in the refrigerator.
