I love to cook with cast iron, and one of the things I absolutely love cooking with it is steaks! To me, nothing beats a great steak with a great sear on both sides, add in some shallots, garlic cloves, some thyme, and searing it in some homemade butter … Delicious!
OK, I am making myself hungry and my mouth is watering…
I know everybody likes their steak cooked in a specific way and why not, with how expensive steaks are nowadays, we better make sure that it is done correctly.
Grill Times and Temperature for Steak
- Rare: 120 to 130 F; 5 then 3 minutes per side; pull off the grill at max 125 F
- Medium-Rare: 130 to 135 F; 5 then 4 minutes per side; pull off the grill at max 130 F
- Medium: 140 to 150 F; 6 then 4 minutes per side; pull off the grill at max 145 F
- Medium-Well: 155 to 165 F; 7 then 5 minutes per side; pull off the grill at max 160 F
- Well-Done: 170 F or more; 12 then 10 minutes per side; pull off the grill at max 165 F
The key to a good steak is making sure that you generously season it with kosher salt. Do not use table salt as it is too fine, kosher salt is what you need. You also want to make sure that the steak is at room temperature before you start so make sure you take it out and season at a minimum of 30 minutes before cooking.
Be sure to let the steak rest after cooking. Letting the meat rest gives the muscle fibers time to relax and allow the juices to redistribute throughout the cut. Without those juices, the meat will taste dry, no matter how premium the cut is.

How to cook your steak in Cast Iron
Delicious Cast Iron Ribeye
Ingredients
- Kosher Salt
- Crushed Peppercorns
- 2 tbsp of butter - 2 separate pats
- Seasoning or additives of your preference
Instructions
- Pat your steaks dry and season generously with kosher salt and pepper. Be sure to roll the sides of the steaks into the salt & pepper.
- Let your steak sit for 30 minutes.
- Preheat oven to 350 degrees with a rack placed in the middle.
- Pull out your cast iron skillet and get it warming up. Set temp to medium-high.
- Sprinkle some oil into your cast iron. Use high smoke point oil light grapeseed or vegetable oil.
- Add your steak to your skillet – Set a timer for 4 minutes.
- Add a tbsp of butter to the top of the steak.
- While cooking you can add more of your favorite seasoning – garlic cloves, shallots, thyme, etc.
- When the timer goes off, flip the steak over and repeat steps 6, 7, 8
- Take a quick second to baste your steak with the butter and spices in the pan.
- When the timer goes off again, turn off the stovetop and place the skillet in the oven for another 4 minutes.
- Once the 4 minutes is up, pull your steak out and baste the steak again. Don’t forget to turn off the oven.
- Let your steak sit for 5 mins.
- It is time to eat, enjoy!
Your steaks should come out a great medium-rare to medium-cooked. You can always adjust the oven time to get the steak done to what you like.
